Bière blonde forte très levurée. On recommande.

Brewery Het anker. Gouden Carolus Hopsinjoor completes the taste palate of the Gouden Carolus beers. “Hopsinjoor” derived from “Opsinjoor”, the typical character of Mechelen and also because of the use of 5 different kinds of hops. These hops are fractioned at a different time during the cooking process in order to conserve a maximum of aroma. Concerning the taste, the Ale has a gentle taste with a slightly bitter finish. Gouden Carolus Hopsinjoor was launched in 2008 on the Zythos Beer Festival and hit the mark: the visitors elected it as best beer, bringing Het Anker “The Consumer’s trophy Zythos Beer Festival 2008”. The beer is bottled unfiltered in order to preserve the bitterness of the hop as much as possible.
Brewery Dubuisson. 2 Trolls, 1 glass offer. The Cuvée des Trolls was created in 2000 in the tanks of microbrewery Le Brasse-Temps, which was established in Louvain-la-Neuve by Brasserie Dubuisson. It is an unfiltered blonde beer with a natural cloud. The beer is produced using only yeast, malt, hops, sugar and water and has an alcohol volume of 7%. Thanks to the addition of dried orange peel during the boiling process, the beer has very pleasant fruity aromas that are in beautiful harmony with its delicate, fully rounded taste.
Brewery Dubuisson. Temporary action: save for a big bottle. Introduced in 1933 under the name of “Scaldis Beer”, this is one of the oldest specialty beers in Belgium and the flagship brand of the Dubuisson Brasserie. The Scaldis Caractère is a filtered, top-fermented beer made from malt, hops, natural sugars, water from the brewery’s own underground source and an exclusive house yeast that has been cultivated for 80 years. The pronounced bitter-sweet taste of this beer, its gentle taste structure and characteristic amber colour are all due to the caramel malts used and the expertise and patience of the master brewer (the beer rests for four to six weeks). The high density – the proportion of malt – and the active house yeast make for one of the strongest Belgian beers, with an alcohol volume of 12%. The CO2 saturated Scaldis Caractère is easily digestible and makes an excellent aperitif or after-dinner digestive beer.
The Bush de Noël was introduced in 1991 to respond to consumer demands for the ideal beer to add lustre to their end-of-year celebrations. The Bush de Noël is brewed solely from malts, hops, candy sugar and water. It is a filtered, top-fermented beer with an alcohol volume of 12%. The use of caramel malts produces a copper-coloured beer with a full, rounded taste. The Bush de Noël owes its fruity taste and subtle hop aromas to the well-thought out choice of hops in this brew. The Bush de Noël is brewed in limited volumes but has already achieved the status of a classic beer for the end-of-year celebrations.

Amber Trappist. Orval beer is a high fermentation beer. The ageing process adds a fruity note, which strikes a subtle balance between the beer’s full-bodied yet complex flavour and bitterness. The beer was first brewed in 1931 and owes its unparalleled taste to the quality of the water, the hops and the yeast used. The brewery has selected very aromatic and unique hop varieties, which hark back to the first brewmaster of Orval, who hailed from Bavaria. The beer’s aromas are very pronounced while maintaining the right level of bitterness thanks to the English method of dry hopping. The various stages of fermentation – combined fermentation with the original yeast and with wild yeast, followed by fermentation in the bottle – mean the beer must age for some time and requires numerous quality controls.

10y. Bourbon and sherry cask. Finished on Marsala cask.

Paddy is the perfect session spirit for gathering ‘round for good times with friends. The first Whiskey to be distilled in Dublin in nearly 50 years, our Single Pot Still pays homage to a Dublin style made famous by the old, now closed, Dublin Whiskey Distilleries. Teeling Single Pot Still Irish Whiskey is crafted using a uniquely Irish mash bill consisting of 50% malted and 50% unmalted barley that has been triple distilled and matured in a combination of American Virgin Oak, Bourbon, and Sherry casks. This is not how everyone makes Irish Whiskey – it’s the Teeling way. That’s the Spirit of Dublin. Aromas of cinnamon, grapefruit, cream soda & roasted almonds. An initial white pepper flavour on the tip of the tongue gives way to ripe Kumquats, peaches & cream and a hint of honey sweetness. Dry, with a strong lingering spice coating the tongue and dark muscovado sugar sweetness.

This Single Malt Irish whiskey was aged for six years in 250 Litre vintage Oloroso ‘Hogshead’ sherry casks from Cadiz in the Andalusia region of South West Spain. Vintage Oloroso Sherry casks are hard to find and very expensive to source but it is Hydes view that they are worth every penny for the complex rich character which they add to the final taste.
Hyde No. 8 Stout Cask finish is a blend of 75% 4 year old single grain, matured in a first fill flame charred bourbon cask and 25% 4 year old Single Malt, matured in a toasted Oloroso sherry cask. This is a collaboration between The Cotton Ball Brewing Company in Mayfield, Cork and Hibernia Distillers (Hyde). The blend is vatted and then transferred into a craft Irish stout infused ex-bourbon Oak cask for 5 to 6 months. The stout was previously aged in the cask for 3 months to infuse flavour before laying down the whiskey.

With the launch of Eddu Silver in 2002, the Distillerie des Menhirs “reinvented” whisky by creating the first ever buckwheat whisky in the world. Far from being productive, buckwheat crops yield four times less than barley (12 to 15 quintals of buckwheat per hectare compared with 60 to 80 quintals of barley per hectare). Its alcoholic yield is half that of barley. “IGP Whisky de Bretagne” means that every aspect of the production process, from grinding to ageing, is done in Brittany in our distillery.

Depending on the location where the peat is extracted, the amount of peat and the duration of heating the peat taste and smell becomes more or less strong and typically
